More often than not, I'll be on the right track with Italian food, and then I severely screw things up in the eyes of my friend Fede - this time, I got a pre-emptive pass mark on these Mezzelune - if these aren't an instant fail, I count that as a win. Here are a few of the details:

The dough:
A couple of handfuls of spinach, blended with one egg, salt, a little olive oil and some warm water to loosen it up. Then, I strain out the pulp and set it aside. The liquid with flour becomes a supple dough.
🌿
The filling: Quite simple - the pulp from the spinach (any leftover egg cooks in the mezzeluna) grated parmesan cheese and caramelized mushrooms.
🫑
The sauce: super easy - I roasted a couple of bell peppers- yellow, and then blended them with cream and SAGE salt, and saffron, before adding water, and reducing to a thick and fragrant cream.
🍋
To cut through it all, a drizzle of lemon is NECESSARY. It gives a sharp accent that brightens up the whole dish!
